Get it together, Girl!

When I look back on my day today, I shudder to think what a stranger would make of me. Just when I was getting decent at juggling gardening along with my parenting skills, school (mine) gets thrown in the mix! The whole day I went from activity to activity absent-mindedly, jittery, accident prone... to an onlooker I must have seemed like an addict or maybe someone who had consumed 30 or so lattes back to back!

It started well enough, got up, got both kids and myself ready to go by 7:15. On the way out the door I realize I have the perfect crew to get rid of my excess veggies... a-ha!... the Master Gardener class students! So I head back and pile eggplant and peppers in a shallow box and head to school. Upon arrival, I attempt to juggle the box along with my coffee and bag, of course spilling stuff in the stairwell. When I plunk the box down to "oooh's" & "ahhhh's" I feel somewhat better, but at the same time think to myself "don't these people garden?" lol!!

(Veggies pawned off on my classmates!)

Afterwards I pick up my youngest and head home to deal with yet more peppers...

13.5 lbs of them!!!

(these are destined for the freezer, I gave up after slicing 6 lbs!)

Yikes, where do they all come from??? Anyway, my husband gets home at about 2:30 pm and agrees to take care of the kids, bath, dinner, etc, so I set about getting to work canning jalapenos. About halfway through gloved mama slicing peppers, he gets a call that he has to go back to work. Now I am trying to handle pepper oils and boil water and sterilize jars on the back deck (propane burner this time!) all while my kids are tearing through the house demanding dinner. I am trying to hurry since I have already been at it for 2 hours at this point, and promply try to pull jars out of boiling water using an inappropriate utensil and spill boiling water all over my hand and arm and toe! Ten minutes later I spill vinegar on my dog. The event culminated in my removing canned peppers to a flat cutting board, walking through the house with them when 2 of them started to slide... instead of letting it crash to the floor, I grab one with my hand and the other is wedged between my elbow and side of torso. Yeah, serious burns all over my body... someone please remind me that this is supposed to be fun and rewarding! I looked like a poster child for an anti-home canning campaign. Del Monte or Libby would love me to show why their products are "superior"! I am starting to wonder myself: I mean, hey, we can get a vat of pickled jalapenos at S@m's Club for like 5 bucks!!! One would never know I actually have experience at this endeavor...

(pepper rings this time, too lazy to scorch and peel them all)

(the end result: pickled & whole frozen jalapenos... I gave up slicing after an hour!)

Well, at least I can say canning season went "out with a bang"! And it's a good thing I don't drink martinis while canning... can you imagine? Or maybe I should start....! Well, one can of Solarcaine later, I can now reflect on my day. I think I will remember this one for awhile. Maybe next year I will actually get everyone out of the house on canning days. I cannot wait to get these kids in bed.... 15 more minutes!

Yesterday, I actually got my whole garden fall-planted except for my onions, garlic & shallots. I am sure I will write about that tomorrow, that is, if my fingers haven't blistered and fallen off! :)

Detoxing from seafood...

I call this the Minnesota detox from taking part in the consumption of over 5 lbs of shrimp and mass amounts of fish over the weekend:

Grassfed Steak w/Fingerlings from the garden! (although my hubby's steak turned out a nicer pink than the one I cut open)

BEEF: It's What's For Dinner!

Back from the Beach!

We got back from Ocracoke Island yesterday. It was so fun to see family even if only for a short time, so glad we did it! Luckily, my husband was able to work things out at the squadron so he could join us. They came all the way from Minnesota, so we are very lucky they choose to vacation at a place so near to us! We were so busy catching up that I didn't get as many good photos as I should have, but here are a few:

leaving the mainland behind Thursday evening

this time of year is awesome for having plenty of space on the beach!

I call this one the "BadAss Brothers-In-Law"... this is Sailor/Farmer/Husband on the right, my brother on the left. Hubby doesn't have any brothers so I think he really enjoys time spent with mine. Unfortunately, my other brother wasn't able to be there, but that is because he was making his way home last weekend from Afghanistan...welcome home!

My brother with his 6 month old daughter, my lovely niece - yay! finally a little girl in the family!

this was taken from one of the decks on the house, it is amazing to notice that even the salt marsh takes on subtle fall colors!

Dinner at their beach house, my brother, his wife and her parents, my kids & husband and little niece...I never seem to be in the photo, lol!

Dinner: shrimp, flounder, Red Drum, Bluefish & Yellowfin Tuna...
yummy good times!

This was taken yesterday after the 5 hour drive back home... my kid didn't even make it long enough to get into the bath and get to bed, lol!
Tired kids are a wonderful thing...

We spent today relaxing, walking around and planning the fall garden (late, I know!) and catching up on blogs and laundry. Tomorrow I will get back into the garden in earnest and start planting and get to those jalapenos. You all were right, they seem just fine after a weekend in the fridge! Next post will be homestead-related for sure...

I'm really going!

Yippee! I am leaving in 10 minutes for Ocracoke Island, see y'all Saturday! I better leave right now before my husband is called back to work...he actually gets to go! Thanks for all the Jalapeno tips...they are stowed in the fridge :)

bye for now!

Jalapeno HELP! request...

I headed out this morning to run some errands before our tenatively planned getaway to the beach tomorrow. Before I left I asked my husband if he could go harvest whatever was left on the jalapeno bushes and rip them out before he left for work.

This is what I came home to an hour later:

Help!! Yes, all 16.2 lbs of them...

So here is my dilemma: I NEED to leave on our road trip tomorrow the minute I get out of school, and no time to skin and can these babies today. Yes, I could freeze them, but I already have 5 gallon bags frozen and we would much rather have more pickled jars for nachos and such this winter. What I need to know from my wise fellow blogger friends is whether or not they will keep in the fridge until Sunday so I can pickle and can them? Have any of you left things for several days before canning? I don't expect there will be much flavor or texture issues since the skins will be charred and discarded, and they are really hot jalapenos, not just bell peppers. Is the fridge thing more of a texture problem or am I looking at a food safety thing? Problem is, I usually plan to can before I even go out to pick so I have never had this happen, lol! I had no idea there was still so many peppers out there... see, I really have been neglecting things! And my husband also said he didn't rip them out since they were covered with blossoms again, lol!

And I actually will get something done today... peas! Thanks Kelly, for lighting a fire under me to get them soaking last night :)

Of course, now I am realizing that I have left tomatoes on my counter for awhile before canning...maybe I am overthinking this the way I do with everything? Advice is appreciated :) !!

Time Management Issues...

Do you ever feel that you are doing everything yet getting nothing done? This is how I have been feeling lately. I know that I am at least maintaining my household at a somewhat even keel, but it has been so chaotic here that I feel like I am just running around placing buckets under leaks, and if I don't get it together, the roof is going to cave in! Oh, yes folks, it's going to be one of those posts!

I am going to use this post as a way to list what's going on at the military "homestead" (nice oxymoron) to see if I can then go back this evening and read it and maybe give myself a break, or at least find a project that I can finish!

In the past week:
1. We said goodbye to sister & brother-in-law after a wonderful visit in which I actually had her harvesting my peppers for me - another chore that I sloughed off!

2. My husband was supposed to leave last Thursday for another few weeks, and they left him here at the last minute. While in theory this sounds good, major chaos ensued. After telling my brother and sister in law (different set of siblings visiting this time!) that my husband would not be able to make it down to their rented beach house, now I am telling them that "yes, he can"! Not exactly. On their couple of hour layover here in town, he had to go to work 3 hours before they got here and remained there until they were long gone on their way to the beach house. Another dinner party hosted alone: check!

3. Since being "able to stay home" this trip, he has been working 15-17 hour days, no kidding! My kids haven't seen him in days, yet he is HERE!

4. Bought child new bicycle for daddy to put together, followed by said child wailing "when is Daddy coming hoooommmmee and fix my biiiikkkkkeeee???!

5. Now we are tenatively back on for the beach house for Thursday - Sat morning, yet my husband says "don't pack the car yet"?!

6. Early onset menopausal symptoms are once again raging. Sleepless nights combined with hot flashes and mood swings... it's a nonstop party. Maybe this is why sailor/husband is working round the clock? Note to self: confront hubby in mood-swing style on this one.

7. The fall garden has not been planted yet....

8. On a high note, I had my first class leading to certification as a Master Gardener this morning. Let me tell you about being in school again and conversing with adults: HOORAY!!! I didn't want to go home!

Here are some random photos from this weekend:

I will allow myself a pat on the back for this one: dinner party for 7 Friday night without my husband's help of keeping the kids out of my hair, lol! We had Greek/Middle Eastern night. I made Stifado w/freshly made tzatziki, Tabouleh, Baba Ganoush with our own eggplant, crusty bread, and this Caprese salad pictured above. I love cooking the Middle Eastern region's recipes since so much of it comes straight out of the garden, herbs and all! I credit my husband for bringing home a wonderful recollection of the Stifado he had in Corfu so I could attempt to replicate it.

This was the night after my dinner party... the one evening I was to spend quietly with my husband after the kids went to bed. What happened???!!! Apparently I am becoming the neighborhood hang-out, lol. Two bags of marshmallows later I gave up on my romantic fire!

Finn's face says it all: Daddy's home again! He gets all the glory around here!

A miscellaneous picture of a disgusting fungus popping up in my front beds. Gross, gross, gross! They smell as bad as they look, and get covered with flies, the good news is that they are usually gone within about 12 hours. We just had about 4 inches of rain in one day, so I think it's appearance was due to that.

Now I need to figure out how to do my homework, help with kiddie homework, get dinner ready, baths, and bike riding time all in tonight by myself. Yeah, the hubby is sitting in the squadron only 2 miles away....grrrrr! At least when he is truly gone I don't count on any relief and he gets a little extra pay as well... that probably sounds harsh but any military gals will know what I'm talking about, lol!

And so it goes for at least the next 2 weeks...placing buckets and waiting for the roof to cave in! At least I am still keeping a clean house, so I know I am not too far gone to be saved :)

I know there is a new "normal" to be discovered here, I just haven't made peace with it yet. My current schedule is just not jiving with my OCD, lol! There is now a 4 year old behind me asking me what "munti-tissing" is... he overheard me talking about multi-tasking... with that, I must leave you now!

Peace Out...

A lazy blog of garden pictures!

A whole lot of nothing going on this weekend! Kind of nice, actually! My tomato beds were ripped out the other day, but I am putting fall planting on hold for a week or two since my brother and family are coming soon and husband is leaving again later this week. It's raining today so we are spending the day teaching the kids to tie their own shoes (nothing like waiting until the day before school starts) with occasional breaks for a movie or snacking...very relaxing! I did get some awesome news - my best friend said she would watch the little one so I don't have to drop out of Master Gardener classes. Yay! Thanks L...you are a lifesaver!

I walked around the yard yesterday and just snapped some random photos of what's going on in the little suburban homestead. Enjoy!

The Little Pond
Fish in Pond (still alive after 3 years!)
New residents in the pond (there's 2, but only 1 shown)
Jalapenos still kicking, every branchlet has this many on it!
Birdhouse Gourds
Go ahead and have container envy now... my neighbor was cleaning his yard and gave me this piece of drainage plastic pipe. Not sure what I am going to do with it yet, but the possibilites are endless!
Burning Bush starting it's fall "burn" colors
Rose of Sharon with happy bee
Rose of Sharon
Beans, Cosmos, and Colonnade Apple Tree at 1 year old, should produce apples next year!
Thai Eggplant still going strong
Peppers are just now starting to grow like they should...in Sep???!!!
Cosmos...planted too close to rich compost piles and shade so they are mostly leafy without flowers!
Yay! A blank slate...waiting for fall plantings, I can't believe I was able to rip out the tomatoes without disturbing the Celosia (red flowers) that were interspersed in the bed.
Finn & friend relaxing by campfire the other night...so excited it was cool enough for a fire!
Celosia... my first time starting annuals from seed. These are stunners and they are all about 4-5 feet high!

Time now to go get the kiddo's backpack ready for tomorrow, hooray for school being back in session!
