Lazy American Version of an Irish Meal!
Yes, I know Corned Beef isn't Irish, but I can't find decent English or Irish bacon anywhere around here so it will suffice - at least I had fresh leeks and parsley! Besides with names like Erin, Finnegan & Lochlann I think it's okay if I refrain from wearing green and buttons that say "kiss me" and just get on with dinner already! I also know about the "no carrots" rule, but I'm not Catholic so I can get away with that one, too! But at least I didn't monkey with the Guinness. Hope you all have the Luck O' the Irish in your gardens, and don't forget to plant those potatoes!
And a Happy St. Paddy's Day to you, too, Erin, m'dear! The closest I can come to being (not) Irish is my Scotch ancestry! But I'll have a Guinness with you anyway.

ReplyDeleteyeah, we had leftover meatballs. No Guiness either, but I don't know that my husband will ever drink Guiness from the states again after his trip to the mother land.....can't say I blame him!

Thomas, I'm with you on the boiled meat thing, LOL, sometimes I do mine in the oven (don't tell!) The carrots represent the color of the "enemy" to the Catholics and thus are not served on Saint Patrick's Day which honors Saint Patrick for converting many of the Pagans (that's me, lol) to Christianity. Any other time root vegetables rule though! (Not everyone even knows this so-called "rule", but many with older generations of Irish in the family observe it). Me? I like carrots anywhere, anytime, even been known to garnish a martini with a pickled carrot LOL
