I aim to please!

Thing 1 walks in from school and says "it smells great, mom" and proceeds to peek into the crock pot...

"too much celery"


Thing 2 takes a look and says...

"yuck, too many beans"



Glad everyone is happy, then.  

I've never frozen my bean & ham soup before but I'm going to try it.  Anyone know if freezing will ruin the texture of the beans?  Besides chili, what are your favorite soups to make big batches of and freeze?

  1. The beans won't care at all! I freeze ALL my soups. I even got brave enough last year to freeze my homemade cream of tomato soup and it defrosts and heats up just fine. (I had always read you couldn't/shouldn't freeze cream soups.) I think my favorite soup to have big bathes of in the freezer is bean with ham. Hubby's would be wild rice with chicken (or turkey or duck or goose -- he's so easy).

  2. So good to hear! I decided on a broth ham and bean for exactly that reason, I was unsure about freezing the cream version. My next batch I will try it! You are THE soup expert, in my book! I LOVE, love wild rice soup. The man was introduced to it a few Christmases ago while home in Minnesota and it was love at first bite. That and the Minnesota take on a Bloody Mary, with skewers of cheese curds, meat and pickles. Yes, we hide our secrets pretty well up there!

    1. Oh, gosh, could I go for a Bloody Mary like that right now! Our daughter makes a mean Bloody Mary . . . next trip to the co-op I'm buying some cheese curds!

  3. I'm soo glad you are 'back' Retirement will surely be different. I grew up as a Navy, & then Army "brat." It's wonderful to stay in one place & live in your own home & garden. But, I move my furniture around way more than most people, so I have a new view of things. Again good to see you writing again. Sandy

  4. It's good to have you back! I've wondered about you and how/what you were up to. You'll like retirement -- it's good to not have somebody else making big decisions for you. Enjoy the gardening when summer finally comes, and rearranging furniture in the meantime! I'm with Mama Pea -- any soup freezes, and it's all good to have right at hand!

  6. Freezing soup is a life-saver for me, and my beans have always done well. One of my favorites is a kale/bean/sausage soup - https://www.budgetbytes.com/2011/10/sausage-kale-soup/ - I've had great results freezing it.

    And talking about beans, before I got into canning them, I would cook big batches of beans, and then freeze them for use later in soups. I'd freeze them in a square, flat GLAD container, and once frozen, would pop them into a Food-Saver bag and vacuum seal them. They would last in the freezer forever (well, not really, but you know what I mean).

    1. Cate, that is a great idea for kale, we could all use more of that! I'm going to make another batch next week to freeze and will definitely be including that.
